Chicken Wing Swim Drills
There are various versions of this and the "touch armpit" version is often seen when youngsters are being trained:

I did a few hundred meters of this today and it seems useful for getting body balance right. My "dinner plate paddle man" had a go and couldn't do it owing to having no body balance.
The Dick Hannoula version is:

The mistake is to imagine you get any thrust from the arms. It seems mostly a leg kick drill to me.
This third version is not really chicken wing:

This is more like Ian Thorpe's "touch water behind you" drill which is rather good.

That last drill doesn't really teach what the preceding drills do though - which is to lead with the elbow (i.e. hand shouldn't move ahead of elbow until elbow moves ahead of shoulder). They all encourage better rotation and higher elbow.

It,s odd that I should be answering your last question NC but the problem with failing to ingrain high elbow is that if you don,t then you might do a dropped elbow under water.
My Silver Cap fellow swimmer was here today and attempted "touch armpit" drill and then Popov drill. His legs certainly improved to be nearer the surface and he had more body roll, but I think his under water arm action had a bit of dropped elbow syndrome.

High elbow swimming has never added extra pace to me, i m now swimming with straight arm and with this technique hips and heels are higher than before; as a result i m 4sec/100m faster than before and also with this new technique i m more sustainable(energy efficient), see my below videos:
